Quick school-night pasta

This is one of those whatever-ya-got kind of meals. Make some noodles, fry up some vegetables, add whatever leftover sauce you have and you’ve got dinner. It normally takes less than a half hour and tastes so rewarding.

Ingredients: 

1/2 box of pasta, whatever kind you have

Butter, olive oil

However many vegetables you want to add (I had half an onion, a few mushrooms, half a bell pepper and a huge handful of spinach)

A splash of sauce (I had pesto on hand)

A handful of shredded cheese

Salt and pepper to season

Directions: 

  1. Fill a medium saucepan with water, add a splash of salt (like the sea) and bring it to a boil
  2. Put about a tablespoon a butter and a splash of olive oil in a large pan on medium-high heat

3. Chop up whatever vegetables you have and add them to the pan, seasoning each vegetable addition with salt and pepper

4. When the water is boiling, add the pasta and follow the box directions (it’s usually about 7 minutes)

5. Before you drain the pasta, add two scoops of pasta water to the vegetables to thin out the sauce

6. Add whatever sauce you’re using — just a little bit so the pasta water combines to just coat the pasta

7. If you’re using spinach, wait until this point to add it so the hot noodles just melt it

8. Sprinkle shredded cheese on top

9. Add the pasta to the pan and mix it all together!
